Discovered in the late 1700s in Eastern Pennsylvania, Seckel pears are thought to be the only true American varietal among the heirloom pears. Often referred to as "sugar pears" Seckel pears are sweet and high in tannins. Each fall we obtain Seckel pears from New York state. We press these lovely little pears and ferment them for six months to full attenuation. We then blend them with our Dry Hard Cider in order to make Seckel Solution.
This light, dry and tangy cider is quite refreshing and pairs nicely with spicy food.
